Nori seaweed wraps are a super healthy meal and work well for lunch or dinner. You can add anything in with the rice and it seems to taste great. For this recipe I've included some of my favourites from the Farm Co. website, the fresh salad and pepper goes great with avocado and spring onions. If you like a little crunch you can add some toasted seeds. I've used short grain brown rice as it has the perfect nutty texture for the wraps and is incredibly good for your health.This peanut tofu mix is also one of my favourites, I'm all about quick, easy and tasty cooking, it takes about 10 minutes to prepare, then simply cook for 30 minutes. Enjoy!
Ingredients
4 Nori Seaweed Wraps
1 Cup of short grain brown rice
3 tablespoons of Tamari or soy sauce (Add more if you prefer a stronger taste)

1 Avocado

2 handfuls of Salad leaves

1/2 Ramino Pepper finely cut

3 Spring onions finely chopped
150g Tofu

1 clove of garlic finely chopped
-
Chopped Chilli
2 Tablespoons of Crunchy Peanut butter
3 Tablespoons of Tamari or soy sauce
Directions
Method for Nori Seaweed Wraps:
Soak the short grain brown rice (Easier for cooking and helps with digestion)
Cook Short grain brown rice for 50 minutes*
Add the Tamari or soy sauce to the rice and mix in
Let the rice cool for a few minutes and then spoon an even amount on to each of the Nori sheets
Add an even amount of avocado, salad, ramino pepper and spring onions and gently fold the nori sheets into a wrap
Serve 2 wraps per plate
Method for Peanut Tofu:
Chop the tofu into pieces and place in a bowl (I use an organic brand called ToFoo)
In a separate jug add 1/4 cup of hot water with the garlic, chilli flakes, tamari or soy sauce and peanut butter, mix well to make a sauce, taste first, if you like a stronger flavour a little more kick then add some more tamari or soy sauce and chilli flakes.
Add the Peanut butter mix to the tofu and coat well, transfer to a glass oven dish
Cook in the oven at 180 degrees for approx 30 minutes (Turn over after 15 minutes)
Serve alongside Nori Wraps with a salad of your choice
Recipe Note
* How to cook perfect short grain brown rice:
In a medium saucepan with a tight-fitting lid, combine rice, 2 cups water, and 1⁄2 teaspoon salt and bring to a boil. Stir once, cover, and reduce heat to low. Simmer for 50 minutes. (Do not lift the lid or stir) Remove from heat and let stand, covered, for 5 minutes; fluff with a fork and serve.
