Can we make the Potato salad interesting again?
Its finally new potato season so we have regenerated this ordinary dish into something pretty special.
Simplicity is always key so don't expect too much of a faff.

Ingredients
Directions
We used an air fryer for the pots for 30 mins. Coated in oil salt, pepper and chilli before hand.
If you don.t have an air fryer you can cook for a bit longer in oven.
The key is to get the potatoes crispy on the outside and soft on the inside so depending on your heat you want to keep an eye on the pots until you are happy with the result.
Meanwhile finely chop the basil and chilli and prep the salad into bowl (dress to your preference).
Once the pots are ready chop half and place all (half and whole) on the bed and salad
Add a splash of oil and plenty of salt
Add the chopped chilli and basil on top of the pots.
Add some Sauerkraut the the side of the dish.
For the curried mayo
Place the mayo into a bowl
Add all the spices and mix well. Reccommeded a few dollops per bowl
