Organic Creamy Coconut, Miso, and Lime Root Veg Soup
This is the perfect soup for Winter and using up leftover root veg from your weekly box. The coconut milk combines perfectly with the deep grounded flavour of the miso and the uplifting flavour of the lime juice to give a thick hearty creamy sauce with the melting root veg. You can serve blended or with the veg whole, personally I love the soft texture of the veg whole in the creamy coconut miso sauce. If you don't have miso you can always substitute with fermented fava bean paste (available on FarmCo), soya sauce, or tamari to make it gluten-free.
