Our Gower grass-fed leg of mutton comes from sheep raised naturally on rich, coastal pastures, developing deep, complex flavours and exceptional texture. High in Omega-3s, vitamins, and minerals, this meat is a true reflection of traditional, sustainable farming. Whether fresh or frozen, it retains its quality—our freezing process locks in nutrients and freshness at the point of butchery.
Freezing immediately after cutting preserves the meat's integrity, ensuring that when defrosted, it remains as fresh as the day it was prepared. This method also supports small-scale farmers by allowing them to supply locally without waste.
Defrosting Recommendation:
For best results, defrost slowly in the fridge for 24-48 hours to maintain juiciness and texture. If quicker defrosting is needed, place in a bowl of cold water, changing the water every 30 minutes. Avoid defrosting at room temperature to prevent moisture loss and maintain peak quality.
