Our Gower grass-fed topside is a lean, tender roasting joint sourced from cattle raised on lush, nutrient-rich pastures. Whether fresh or frozen, the quality remains exceptional—our freezing process locks in peak freshness and nutrients at the moment of butchery.

Freezing on cut ensures topside retains its tenderness and depth of flavour when defrosted, supporting small-scale local supply without compromising quality.

Defrosting Recommendation:
Defrost slowly in the fridge for 24-48 hours. For a quicker option, submerge in a bowl of cold water, changing the water every 30 minutes. Avoid room temperature defrosting to maintain texture and moisture.
