Our Gower grass-fed short ribs come from cattle raised on lush, nutrient-dense pastures, producing meat with exceptional marbling, deep flavour, and rich tenderness. Naturally high in Omega-3s, vitamins, and essential minerals, these ribs are a true reflection of sustainable, pasture-based farming. Whether fresh or frozen, the quality remains top-tier—our freezing process locks in peak freshness and nutrients at the moment of butchery.

Freezing on cut ensures the short ribs retain their natural juiciness and texture when defrosted, making them ideal for small-scale local supply without compromising quality.

Defrosting Recommendation:
For best results, defrost slowly in the fridge for 24-48 hours to maintain tenderness and juiciness. If needed sooner, place in a bowl of cold water, changing the water every 30 minutes. Avoid room temperature defrosting to preserve optimal texture.
