Whether fresh or frozen, the quality remains outstanding—our freezing process locks in peak freshness and nutrients at the moment of butchery.

Freezing on cut ensures that when defrosted, the braising steak retains its texture and juiciness, making it ideal for small-scale local supply without compromising quality.

Defrosting Recommendation:
Defrost slowly in the fridge for 24-48 hours for the best texture and flavour. For a quicker option, submerge in a bowl of cold water, changing the water every 30 minutes. Avoid defrosting at room temperature to maintain quality and prevent moisture loss.
