Pastificio Carleschi

(Past-if-each-yo Car-less-key) is the first British artisan producer of organic dry pasta. Our focus is on quality and sustainability and our vision is to sustainably produce dry pasta using grains and flour sourced locally.

In terms of quality, all our pasta is made with British stoneground flour from ancient wheat varieties (Spelt, Emmer and Einkorn), bronze extruded and slow dried at a low temperature. By making our product this way we keep all the natural flavour and nutritional value of the grains intact while at the same time obtaining a perfectly textured, very tasty pasta with a great tenure of cooking. Five of our pasta have won a Great Taste Award in 2020.

Choosing Organic and British flour is our first big commitment to sustainability. We are certified by the Soil Association for dry pasta production and we do source most of our flour directly from British farmers.
