This is the perfect soup for a Winter's lunchtime and is super easy to prepare. The combination of cooking on a low heat for a long time and the uplifting AllSpice mix are great for bringing much needed warmth and energy into the body during the cold Winter months.

Ingredients

1 large onion chopped

1 tablespoon of grated ginger

2 medium sweet potato

3 cloves of garlic chopped finely

200 grams of spinach
1 litre of veg stock
1 teaspoon of AllSpice (If you don't have a pre made All Spice handy try adding some cloves, ground nutmeg and cinnamon)
2 tablespoons of tamari (For gluten free) or soy sauce (Add more at the end if you prefer a deeper flavour)

Directions
Simply add all the ingredients to a pot with 1 1/2 pints of veg stock, bring to the boil and then reduce to cook on a low heat for an hour (If you have less time cook for 15 minutes or until the sweet potato is soft).
