This is a very simple soup to prepare if you're short on time. The beauty of making a soup with organic green squash is the depth of flavour in this tasty root veg and you don't need to add too many spices or flavours to have a super tasty soup. It works really well with organic red lentils and the uplifting kick of ginger and garlic. I had a spare lime leftover so added that to the ingredients but it works just as great.
Ingredients

1 Green Squash

2 Cloves of Garlic

Inch of Ginger
1 Pint of Veg Stock

Smoked Sea Salt (use ordinary if you don't have smoked

Juice of 1 Lime (Optional)
Cream or Oat Cream

Lentils 250g
Directions
Peel, chop and deseed the green squash
Peel and chop onion, garlic and ginger
Add the chopped veg, red lentils and other ingredients to a saucepan and cook for fifteen minutes or until lentils and green squash are soft
Blend and serve with a drizzle of oat cream
